MMMMM…Irish Potatoes! The history of this confection is varied. It seems they could have been created by immigrants from Ireland or Germany. But since we’ll soon be celebrating St. Patrick’s Day and they are called “Irish” potato candies, we’ll say they were first made by the Irish! Whatever background they come from, they’re delicious.

Ingredients
2 lbs.
Confectioners sugar
1 (8 oz.) package
cream cheese, room temperature
1/2 cup
margarine or butter
1 tsp.
vanilla
3 oz.
coconut
a pinch
salt
1-2 tbsp.
cinnamon
Instructions
Measure all ingredients except cinnamon into a large mixing bowl and mix well with hands. Refrigerate one hour. Shape 1/2 rounded teaspoon of mixture into balls. Roll balls in cinnamon. Store in the refrigerator.
