“I needed a special meal for some special guests at the University of Notre Dame. It was Lent and with my schedule I didn’t have much time to prepare it. I called my best reference and the greatest cook, my mom! Her answer, ‘Try my cheese strata.’ For special and meatless meal…add the crab. Roasted asparagus adds to the flair, but green beans would be fine too. I completed the presentation with some Cole slaw and mandarin oranges.”
Cut bread into quarters; arrange half on the bottom of a greased casserole dish. Layer crab (ham or chicken) on bread. Cover with half of the cheese. Pour egg and milk mixture combined with seasonings on top. Be sure all is moistened. Cover and chill overnight. Bake at 325 degrees for 40-45 minutes.
