This recipe was my brother, Fred’s, favorite recipe. It is easy to make and really delicious. The celery and parsley really add to the presentation and the flavor of the dish.
Stir together crackers, Parmesan cheese, and garlic powder. Dip fish in 3/4 stick melted butter or margarine. Place buttered cod/haddock into breading to coat and place into a glass baking dish. For added flavor, saute finely diced celery and parsley flakes in butter. Add a scoop to the top of each piece of fish. Bake at 400 degrees for 20 minutes.
